Sesame rice

Ingredients :

  • Rice – 1 cup
  • Seasame seeds – ¼ cup
  • Mustard : 1 tsp
  • Cumin : 1 tsp
  • Urad dal : 1 tsp
  • Channa dal : 1 tsp
  • Red chillies : 4
  • Coriander seeds : 1 tsp
  • Curry leaves : Finely chopped
  • Ghee – 2 tsp
  • Salt to taste

Preparation Process :

  • First dry roast the sesame seeds, red chillies and coriander seeds and powder it.
  • Now take a pan and heat with ghee.
  • Then add mustard, cumin, urad dal and channa dal.
  • When they colour change to golden brown add curry leaves and turmeric powder.
  • Sauté for a min.
  • Then add the powder and mix well.
  • Finally add the cooked rice and salt. Mix gently until coat the rice well.
  • Serve hot with papad and curds.

Mushroom biryani / Mushroom rice

Ingredients :

  • Mushroom : 200 grams
  • Basmati Rice : 2 cups
  • Onion : 1
  • Tomato : 2
  • Coriander leaves
  • Mint leaves
  • Bay leaf : a small leaf
  • Lemon extract : 3 to 4 drops
  • Ghee and Oil : 4 to 5 tsp
  • Salt to taste
  • Coconut milk : 1 to 2 cups (Optional)
  • Grind and make a paste of:
  • Sauf : 1/2 tsp
  • Cinnamon : 2 inch stick
  • Cloves : 4
  • Green chilies : 4 to 5
  • Ginger garlic paste : 1 tsp

Preparation process :

  • Slice Onion into length-wise. Chop Tomatoes finely. Cut Mushroom into pieces. Grind and make a paste of the above mentioned ingredients. Soak Basmati rice for 15 minutes. Keep everything ready.
  • Heat Ghee and Oil in a pan. Add Bay leaf and fry for a minute. Add Onion and fry till it turns into golden brown in color.
  • Add grounded paste and fry till raw smell goes off.
  • Add Chopped Tomatoes and fry till it becomes soft. Add little salt which makes the tomatoes soft quickly.
  • Add Mushroom pieces and fry till it becomes little soft and the size of the mushroom pieces are reduced noticeably.
  • Add Chopped Coriander and Mint leaves and fry till it becomes wilted.
  • Then add soaked Basmati rice and fry for 2 to 3 minutes or till the water evaporates from the rice.
  • Now Transfer this mix to the rice cooker.Add 3 cups of water(either Coconut milk+water or water), Salt and Lemon extract. Cover and cook.
  • Serve hot with raita.

Vegetarian Croquettes

Ingredients :

  • Potato(boiled and mashed) : 500gm
  • Milk : 4 tb sp
  • Flour : 3 tb sp
  • Baking powder : 1/2 tb sp
  • Green chillies : 2-3
  • Coriander : Finely chopped
  • Oil for frying the croquettes
  • Salt to taste

Preparation Process:

  • Mix all the ingredients together.
  • Oil your palms and divide the mixture into small portions.
  • Shape each portion into elongated rolls and deep-fry in oil till they are golden brown.
  • Serve with ketchup or salad.

Thapil Dosa

Ingredients :

  • Rice flour : 2 cups
  • Wheat flour : 1/4 cup
  • Red chili : 2
  • Mustard : 1 tsp
  • Cumin : 1 tsp
  • Urad dal : 1 tsp
  • Channa dal : 1 tsp
  • Green chili paste : 1tbsp
  • Dry or fresh coconut : 2-4 tbsp
  • Curry leaves : Finely chopped
  • Coriander leaves : Finely chopped
  • Salt to taste
  • Oil as required

Preparation Process :

  • Mix the rice flour and wheat flour in a boul with water to required dosa consistency(not thick) with some salt, green chili paste, coconut place it a side.
  • Now heat 4-5 tbsp of oil in a pan, add red chili, urad dal, channa dal, mustard, cumin, curry leaves and fry till the dal turns golden brown.
  • Add this to the dosa mix and mix well.
  • Take a dosa pan and put 1 tsp oil on it and spread evenly through it.
  • When the pan gets heated pour the dosa mix evenly on it and sprinkle some oil.
  • It appears with bubles on it.
  • Let it cook one side on a medium flame for 2-3 min and slowly turn on to the other side and cook similarly.
  • Prepare dosas with the remaining batter also similarly.
  • You can even make the dosa crispy by cooking it on a low flame or else soft.
  • Serve hot with desired chutney or pickle or can be taken as it is.

Note : Rice flour gives crispyness to the dosa
Wheat flour gives colour and it doesn’t break the dosa

You can even make dosa with only rice and wheat flours without any Tampering and coconut, green chili.

Onion Idly

Ingredients :

For Idly batter

  • Urad dal : 1 cup
  • Idly rava : 2 cups
  • Cooking soda : 1/2 tsp
  • Salt to taste
For onion idly
  • Onion : 2 finely chopped
  • Green chili paste : 1 tbsp
  • Channa dal : 2-3 tsp
  • Oil as required
Preparation Process :
  • Soak urad dal for 4 hrs and after that blend it to a fine paste and mix with washed and water drained idly rava with cooking soda and salt.
  • Adjust the consistency of the batter.
  • Now add onions, green chili paste, channa dal and mix well.
  • Put some oil before putting the batter to the idly tray and fill all the trays in it and steam it for 20 min.
  • Onion idly is ready.
  • Serve hot as it is with ghee or with some chutney.

Note : Idlies will be more delicious if prepared with the batter next day but onions, green chili and dal should be mixed before preparing only.Morning u can prepare the routine idly and evening or next day you can prepare onion idly.
